Frosted Peanut Butter Cookies


3/4 cup canola oil or applesauce plus 1/8 softened butter
1 cup peanut butter
3/4 cup sugar and packed brown sugar
2 eggs
1/4 cup buttermilk
2 teaspoons vanilla extract
3 1/4 cups all purpose flour and 1/4 cup wheat flour
2 teaspoons baking soda
1 teaspoon salt Yield: 2 dozen or more. These are one of my favourite cookies; hope you enjoy Baking!.........Enjoy!!

Directions
In a large bowl, cream the oil, peanut butter, and sugars until light and fluffy.
Add eggs, one at a time, lightly beaten.
Add milk and vanilla.
Combine the flour, baking soda, and salt.
Add to the creamed mixture and mix well.
Roll into 1" balls.
Place on ungreased baking sheet about 2" apart. Can press down with fork for design.
Bake at 375 degreees F for about 10-12 minutes til' golden brown.
Remove to wire racks to cool.

Frosting
1/3 cup butter, softened
2/3 cup peanut butter
2 cups confectioner's sugar
1/3 cup milk
In a small bowl, beat the ingredients until smooth.
Frost cookies. Will frost about 2 dozen.
